#breaduary No.2 - This loaf was started last night. I used more #sourdoughstarter but less water than yesterday. Whole wheat flour. It was very thick after the first hand mix, but then softened up as I let it rest. Over the next three hours I stretched and folded it with wet hands to prevent sticking. Before bed I shaped the loaf making sure to only stretch and tuck - no folding or kneading. Then it was put in the bowl upside down overnight. Left at room temperature overnight. Baked this morning at 475F for 20 min. Then lowered to 350F for 20 min. A tray of water in the oven provided humidity for the first 20 min.
